4 Eggs
2 English Muffins
4 Slices Mozzarella Cheese
1 Tomato (sliced thin)
4 Teaspoons Pesto
1 Tablespoon White Vinegar
Bring a pot of water to a boil, adding the vinegar and a pinch of salt. Poach the eggs. Lay the tomato slice over the English Muffin, then lay the cheese over that and toast. When the eggs are done, lay them over the top and add a teaspoon of pesto.
